Sunday Smoothie: Tomato mix with pepper

We had a great weekend, on Friday and Saturday night we went to a festival called “Parkfeest Oosterhout”. Most artists on the festival are Dutch. Friday night was with cover bands and as closing act a couple of Dj’s with a 80’s – 90’s program. Yesterday was with Di-rect and Raccoon. You see them on every festival in Holland during summer, but who cares. Music isn’t the most important thing of the festival for me. With this “parkfeest” you always bump into old friends or people you haven’t seen for a while. The other side of a weekend like this is, that most of the time we don’t sleep enough, and during the day I feel my energy levels dive south;-). I can drink some coffee then, but today I combined it with the Smoothie Sunday, but then with a tomato mix . Read more about the energy boost.

Instead of drinking that coffee boost to raise my energy levels, I drunk a Tomato mix with pepper and spring onion. Which was actually quite nice. I don’t know if it really boosted my energy, probably in this case some good sleep will do better;-).  But it’s simple with tomato juice and red pepper without the seeds. They say red peppers can give you an energy boost, so that’s booster in this drink.

The second thing about this drink, (it’s a mix, but to be honest, you can hardly call it a smoothie), is that you can also use it as an appetizer, or an “amuse” like we call it in Dutch. A little small food thing that you can give your guest just before you start the real dinner. Let’s say to warm them up for dinner;-). You use much smaller glasses for the appetizer then for the “Smoothie” version.

The Recipe:

Sunday Smoothie: Tomato mix with pepper

Cakesandpumps
I made a Tomato Mix, like some kind of Smoothie, but then one that will give you energy. With tomato, pepper and spring onion.
Servings 2

Equipment

  • Blender

Ingredients

  • 500 ml Tomato juice
  • 1 Red Spanish pepper
  • 2 Spring Onions
  • Worcester Sauce
  • Icecubes
  • Salt

Instructions

  • Put the tomato juice into the blender.
  • Clean the red pepper by removing the seeds out of the pepper, and cut the pepper into very small pieces. Put the pepper pieces into the blender.
  • Cut both the spring onions also in very small pieces, put 1,5 part in the blender, the rest is for decoration.
  • Put the icecubes and a little salt and a few zips of Worcester Sauce up to your own taste into the mix, and mix everything until you have a smooth mix.
  • Put the mix into a glass and decorate the glass with the pieces of spring onion.
  • The Smoothie is finished!
